Elk Meatloaf

  1 1/2 lbs ground elk meat
  1 pound lean ground beef
  1 onion (finely minced)
  3 eggs
  8 ounce
  1 cup dried bread crumbs
  1 teaspoon salt
  1/4 teaspoon ground black pepper
  1 teaspoon lemon pepper
  3 tablespoons dijon mustard
  3 tablespoons apple cider vinegar
In a large bowl lightly beat eggs and then add the tomato sauce, onion, crumbs, salt, and pepper. Add ground meats and mix well. Press into an ungreased loaf pan. Combine the apple cider vinegar and dijon mustard and pour over the meatloaf. Bake uncovered at 350 degrees for 60-70 minutes.
